Fehr Foods utilizes a Near Infrared technology (NIA) to analyze product moisture content and protein levels in less than 10 seconds. The accuracy of NIA is +/- one tenth of one percent. This allows for decisions affecting quality and process changes to be made in real time.
Quality Control technicians are on the production floor anytime a product is being produced. Their job is to ensure the highest quality product by utilizing process control and intense quality control checks. Strict monitoring of cookie moisture content is performed to produce a cookie that will retain its original freshness for the entire shelf life.
At Fehr Foods our ingredients are controlled under strict FIFO (First in First Out) guidelines to maintain freshness and to help extend the shelf life of our finished products. Many of our ingredients are stored under temperature control to ensure the highest quality consistency. Each package of products is individually coded to ensure freshness.
Fehr Foods has a comprehensive Food Safety Program that includes an allergen prevention program. The allergen program allows us to protect the customer from possible exposure to ingredients that have been identified by the FDA as containing allergens through a combination of scheduling and cleaning practices.

Fehr Foods, Inc. was established in Abilene, Texas in February 1992. The manufacturing facility initially consisted of one shift, two ovens, three customers and approximately forty different product items. Since then, the company has grown in every conceivable way. We now operate around the clock with three shifts, our oven capacity has more than doubled, our customers now number over 100 and the product line keeps expanding. Our customers are located in 27 different states and our trademark Lil' Dutch Maid cookies continue to gain national recognition.
The primary market of Fehr Foods, Inc has always been in the value priced, wholesale cookie market where our niche is to provide the best quality at the lowest cost.
Our customers vary from local and regional distributors to the Fortune 500 retailers, to other manufacturers who purchase our cookies to use in their manufacturing process. In order to continue the growth and success of our past decade, we are committed to strive for excellence, integrity and honesty.
